Our meals last week were:

Monday – My beetroot soup

Still eating it from the big batch that I made a couple of weeks ago and froze. You can get the recipe from my Meal Planner #3.

Tuesday – Salmon & dill fishcakes, with a salad

Not my favourite fishcake (can’t remember what the brand is called as had thrown away the packaging before freezing the fish) but we’re trying to empty the freezer so they had to be eaten up.

Wednesday – Omelette with potato waffles and grilled tomatoes

Quick dish after a long day in Manchester. I wasn’t planning to have anything as it was after 8pm but Hubby was having it and it smelt and tasted so lush!

Thursday – Pesto Orzo with grilled courgettes & tomato salad

One of our favourite dishes – like EVER! Recipe available in my Meal Planner #1

Friday: Fresh cod with broccoli & jasmine fried rice  

Yummy dinner made by the Hubby. Cod was organic and sustainably sourced by Abel & Cole (we tried their fruit & veg boxes but weren’t too impressed with the quality.)

Saturday: Out for my birthday lunch

We went to our friend Lucy’s Chinese Streetfood stall, Hao Hao Chi, at Peckham Levels. Their food is absolutely stunning!

Sunday:Fresh & homemade red Thai curry with basmati rice

Such a flavoursome recipe from my darling Hubby who made my birthday super special.
