Our meals last week were:

Monday: My beetroot soup from last week (from frozen)

Recipe in my Meal Planner from last week.

Tuesday: Millet bowl with red pepper sauce & veggies

Red pepper sauce was made on Sunday – recipe in my Meal Planner from last week. This time with some leftover veg and sides – avocado, feta, humous, tomatoes, cucumber, beetroot in vinegar. So yummy!

Wednesday: Homemade veggie pizza on naan bread.

Simple to make and great for customising to suit everyone’s different tastes – perfect in our household as I don’t eat meat, hubby does and the boys have their favourite things too.

Thursday: Homemade courgette stew

Made by my Mum a few weeks ago – I need to get her recipe for it and recreate it myself.

Friday: Fish cakes with chips and salad.

Nothing fancy but it was a nice meal.

Saturday: Stir fry noodles and veg

Hubby was out and I had some stir fry noodles and veg.

Sunday: Jacket potato with cheese and baked beans

Once more – a simple but hearty meal, again great for customising with minimal effort. And the boys loved having it with us too. 

Overall thoughts:

I think we did really well going through our freezer and fridge to come up with meal ideas, spend less on food and waste less by using up what we had already had in the house.
